Dinner with Chef Carl and Eat Fit Nola

When our Chef Carl, in his early 30's, was diagnosed with stomach cancer in April 2014 we were all shocked. We expected things to be different at the restaurant for a while and they were, but only for a little while. Before we knew it, Chef Carl was back in the kitchen, his cancer in remission and his point of view on life - and food - forever changed.

While Carl was going through treatment he met regularly with Molly Kimball, Elmwood Fitness' lead nutritionist and the mastermind behind Eat Fit Nola, the movement to teach New Orleanians how to eat better even at restaurants. Molly taught Carl about nutrition and about healthful tips and tricks that made dishes be good for you and actually taste good! Carl was so inspired by what he learned about healthy cooking that he wanted to bring it to his restaurant. Right now you can find Eat-Fit-Nola approved dishes at every meal at Cafe Adelaide.
