Meet Bar Chef Lu
“I was always a spirits girl, and I live in a city where the history of the cocktail is rich,” says Lu Brow, bar chef for Café Adelaide and Swizzle Stick Bar. These things—along with Brow’s professional expertise on classic cocktails make her the perfect mixologist for the Swizzle Stick Bar at Café Adelaide, named to honor the late Adelaide Brennan, who personified the avant-garde cocktail culture of the late 1950s and ’60s.
Whether she serves guests across the bar or at the table, Brow revels in interacting with them and making sure they understand the pleasures of what they’re drinking. “This job is a surprise every day,” she says. ”You get to see everyone enjoying all the celebrations of life, big and small. We’d just like it all to happen with a well-made cocktail.”
